Coffee and Chocolate Marble Cake with Marzipan Surprise

Marble Cake..... what a beauty!


You get both chocolate and vanilla sponge = perfect, no compromise.


I decided to adapt the recipe to add a hint of coffee into the chocolate sponge and add marzipan into both layers to make it that bit more exciting. 


This cake is perfect for a lazy sunday afternoon with a cup of tea or coffee! 


Ingredients:
                                                   Serves10
250g- Plain flour
2 teaspoons- Baking powder
1/2 teaspoon- Salt
200g- Caster sugar
125g- Butter, softened
2- eggs
1 teaspoon- Vanilla extract
250ml- Milk
2 tablespoons- Cocoa powder
2 tablespoons- Intense Coffee
50g- Marzipan (cut into chunks) 


Method:

1.Preheat oven to 180 C. Grease and flour a cake tin
2.Cream the butter and sugar. Add the vanilla.
3. Then add the eggs slowly.
4. Fold in the flour, salt and baking powder.

5. Reserve 175ml of the cake mixture; pour the remainder into tin and top with half the marzipan chunks. (push into the mixture).

6. Stir the cocoa and coffee into the reserved mixture and drop it onto the white mixture. 

7. Using a knife, swirl the cocoa mixture into the white mixture to incorporate it in a marbled  effect (I kept both layers quite separate).

8. Add the remaining marzipan chunks to the top of the cake (push down a bit).

9. Bake 30 to 35 minutes, until an inserted wooden skewer comes out clean.
